Chances are at some point during your Portugal Holiday you've tried one of the delicious custard tarts known as "Pasteis de Nata"
Here is the recipe for you to try at home - easy to do and yummy!
500 gms puff pastry
250 ml cream
250 ml full cream milk
400 gms sugar
60gms corn flour
8 egg yolks
Grated rind of half a lemon
Grease a muffin tin
Roll out the puff pastry into an oblong and roll up. Cut the roll into rounds about 2cm thick. Roll each one out gently until it fits into a muffin tin, if it is easier just press out to shape with your hands making the pastry thinner at the bottom than at the edges.
Mix the sugar with the water and bring to the boil cook for three minutes without stirring and leave to go cold
Mix the corn flour in a little of the milk then add the rest of the milk, cream,and grated lemon rind. Cook over hot water whisking until thick. Remove from the heat and add the egg yolks and the cooled sugar syrup.
Fill the pastry cases and cook at 290º C for about 8-10 mins until golden brown.
